Homemade Salad Dressings
Use the best fresh ingredients,even a simple salad can be incredible
with farm fresh ingredients.Your dressing should compliment your
salad.Olive oil has a distinctive flavor that will flavor your
salads.First press or virgin are two of the best Olive oils.
Lemon juice and vinegars are also favorites to add flavor.
Popular vinegar favorites include wine,cider and malt vinegars.
Spices and herbs should be fresh whenever possible,making spiced
or herb-ed vinegars in larger quantities when fresh herbs are available
can help you always have the best on hand.Always store your dressings
and ingredients in a cool place in sealed containers.
Homemade Mayonnaise:
Ingredients:
1 whole egg
1 egg yolk
1 tsp. Dijon mustard
1 1/2 tbsp. lemon juice
1 c. olive , sunflower or salad oil
(try each oil to discover a unique taste)

Preparing your mayonnaise:
In blender combine egg and egg yolk
beat on medium for 3 min. add mustard
and beat on medium 1 min.Continue beating
and add oil and lemon juice very slowly
1/2 tsp. at a time
Blend until all oil is added and mayonnaise
thickens about 15 min.
Care must be taken when making mayonnaise
use chilled ingredients and always keep
mayonnaise and your salad dressing which contains
mayonnaise refrigerated.Use your stored
homemade mayonnaise within 3 days.
Spoiled mayonnaise may not so any signs
or evidence of spoilage and can be very
toxic.

Salad

1 - 10 oz. pkg. fresh spinach ( torn )
1 lb. fresh mushrooms ( sliced thin )
1/4 lb. bacon ( fried and crumbled )
3 hard boiled eggs ( sliced or chopped )
2 celery ribs ( thinly sliced )
3 green onions ( sliced thin )
3/4 cup shredded cheddar cheese

Salad Dressing

1 cup ketchup
3/4 cup vegetable oil
3/4 cup vinegar
1/2 cup sugar
1 tsp. Worcestershire sauce
1 tsp. salt

Preparing your salad

In a large salad bowl combine all of the first seven ingredients and toss .
Place salad in refrigerator and let chill while you prepare your dressing .
Place all remaining ingredients in container with a lid and seal .
Shake well until all the sugar is dissolved . Sprinkle your homemade dressing
over chilled salad and serve.

Yields 10 - 12 servings
